New Year, New Challenges: Veggie Cleanse

Happy New Year - It's been a while since I've last posted!

2012 was definitely a memorable year. For one, I became a vegetarian (though I eat seafood from time to time) and started taking the necessary steps to become a little healthier.

After eating so much food over the holidays (thanks to my family's amazing cooking), my boyfriend & I promised to go on a post-holiday cleanse this week (5 days). Every day I plan on making a new vegetarian dish, following the guidelines in this LiveStrong post. This will help me improve my very limited cooking skills, while watching exactly what I eat! Cutting out processed foods, alcohol and coffee is going to be tough but I think I'm up for the challenge.

Day 1: 

Breakfast:
  • Fruit Salad with Blueberries, Strawberries and Pineapple
  • Banana
Lunch: Took a client out to Soho House
  • Burrata w/ Beets
  • Kale w/ Roasted Squash Salad
Snacks:
  • Almonds
Dinner: Brown Rice Vegetable Saute featuring Broccoli & Mushrooms (Food.com)


I tweaked the recipe a bit since I am trying to add a variety of vegetables to my daily intake. I added orange bell pepper and a little bit of spinach to the mix as well. I also prepared brown rice as usual with water instead of using any broth.

I am going to continue posting to keep myself motivated. Looking forward to tomorrow!
